Hi, my name is Paul Ellis and I was the Chef/Owner of the famous Steakhouse Tapas & Grill in Findon Village, and the Ellis Cookery School. The Ellis Cookery School has been operating for many years, originating in London in the 1980s. I have worked with some of the top Chefs in the UK, and I have travelled the world developing my knowledge of food. Whilst living and working in London, I ran a very successful events catering company which specialised in weddings and functions for up to 250 people. I am still very passionate about catering for these type of functions, and would be happy to provide a quote for your special occasion.

I also enjoy working as a private/freelance chef, catering for private parties in the comfort of your own home.

I offer bespoke catering services tailored to your needs. I can cook either in your own home, or at any location of your choice, from an intimate dinner for 2, to a fully catered dinner party or event. I offer simple, healthy solutions, and will provide a memorable culinary experience for you and your guests. The presentation of the food will only be surpassed by the taste.

I often get asked to cater for Hen Parties, cooking lunch or dinner for a group in the comfort of their own home. A sample menu would be:-

 

STARTER: Smoked chicken and duck terrine – vanilla dressed leaves and plum relish

MAIN: Pan seared Cornish sea bass; wilted rocket; crushed New Jersey royals, burnt butter sauce

PUDDING: Chocolate crème brulee with shortbread biscuit

Price £22/head (includes all ingredients, Chef and assistant)

From as little as £10 per head we can provide a Hog Roast of the highest standard, with crackling to die for! Included in the price we will also cater for vegetarians. All our meat is locally sourced and cooked in our own hog roast machine. We can also cook any other meat of your choice, providing a unique flavour.

The Manwich is the creation of Paul Ellis. It is delicious rump steak with equally delicious meat balls, cooked in Paul’s special sauce, served in a baguette. This is washed down with Paul’s “Fire Water” which is a unique, healthy, sugar free drink made with chilli and Ginger. Paul can be found at a variety of food and drink festivals across the country, cooking the famous “Manwich”. Why not hire this for your event?

 

Manwich

As a chef I like to think I’ve invented the perfect Manwich, top quality meat, great tasting sauce, in a crunchy sandwich.

So how have I made this great delight?? Using veal bones roasted till slightly dark, adding root vegetables, then simmering for two days. I then strain and reduce ¼ , adding meat balls (using 100% beef) with panko bread crumbs, eggs, basil and black pepper, adding Sussex rump steak cut into strips and pan fried. I then add to our reduction, adding coriander, chilli and ginger

Job done.
